Pitaya Smoothie Bowl

  • 1 Red Dragonfruit

  • 3 Bananas, frozen

  • 2 Tbsp Chia seeds

  • 1 tsp Vanilla essence

  • ⅓ Cup Non-dairy milk of choice

    Topping Suggestions:

  • Toasted coconut shreds

  • Fresh fruit, sliced or chopped

  • Crushed, toasted nuts

  • Coconut yogurt

  • Chocolate avocado pudding

  • Hemp seeds

  • Melted chocolate etc.

  • Muesli or Granola

  • Crumbed or toasted stale muffins

  1. ...aka Smoothie bowl - but amazeballz! If you have trouble finding fresh red dragonfruit, try the farmer's markets, or wait until the season comes around again. Alternatively, buy lots and freeze them for whenever the craving strikes.

  2. Prepare your chosen toppings first so they're ready to go.

  3. Peel the dragon fruit and put it into a blender with the frozen bananas, chia seeds, vanilla, and non-dairy milk.

  4. Blend well. You may need to scrape the edges down a few times, or use the blender stick (if it comes with one) to keep the mixture nice and thick while getting it smooth.

  5. Pour/scrape the thick pink smoothie into a flat bowl. Sprinkle all your chosen toppings on top in as decorative a manner as you wish.

  6. Dig in and enjoy!

If you have double-walled (insulated) glass coffee mugs, you can make them to go and enjoy at work, uni, or on a picnic brunch later.

Although the red dragonfruit is absolutely stunning, try the white dragonfruit instead; or use berries, or ¼ Cup Acai.
